Minced Turkey Ragu with Tagliatelle

Our Minced Turkey Ragu with Tagliatelli is a one-pot wonder full of delicious ingredients including peppers, tomatoes and our Pitted Black Olives in Brine, for a tasty and rich Ragu.

Serves 4

Ingredients

500g turkey thigh mince
1 onion, chopped
1 red pepper, diced
2 cloves garlic, crushed
2 tsp dried oregano
75g Crespo Pitted Black Olives in Brine, sliced
400g can chopped tomatoes
3 tbsp sundried tomato paste
300ml chicken stock
300g tagliatelle

Instructions

  1. Fry the turkey mince, onion, pepper, garlic and oregano in a large saucepan for 2-3 minutes to brown. Add the olives, tomatoes, tomato paste and stock and simmer, covered for 20 minutes, stirring occasionally. Remove the lid and cook for a further 5 minutes until the sauce has reduced a little.

  2. Meanwhile, cook the tagliatelle in boiling water according to pack instructions, drain and serve with the ragu.


Cooks tip:
Try swapping the minced turkey with minced pork, beef or lamb.  Great served with any shaped pasta.
