Gnocchi, Olive & Tomato Bake

Who doesn't love digging into a bowl of Gnocchi? Packed full of Mediterranean flavour, this simple and comforting recipe can be made with all your store cupboard favourites.

Cook: 15 - 20 minutes
Serves 4

Ingredients

1 tbsp olive oil
1kg chicken thighs
1 onion, sliced (180g)
1 green pepper, sliced (180g)
100g chorizo, sliced
400g can chopped tomatoes
100g Crespo Black Olives in brine, drained
150ml chicken stock
Chopped parsley to garnish

Instructions

  1. Preheat the oven to 220oC, gas mark 7.

  2. Cook the gnocchi in boiling water for 3 minutes, drain and return to the pan.

  3. Add the pesto, olives, tomatoes and half the mozzarella and transfer to an ovenproof serving dish.

  4. Mix the breadcrumbs with the oil and sprinkle over the gnocchi with the remaining mozzarella and bake for 15-20 minutes until golden.


Cooks tip:
Try using spinach gnocchi or filled tortelloni pasta.
